FIRST!! IF YOU SHOW THE PICTURE AS BEING THE BACKGROUND,
DOUBLE CLICK ON THE LAYERS PALETTE AND CHANGE
"BACKGROUND" TO "LAYER 0"

Zoom in really close (I scanned at 400dpi and zoomed in 300%, so it's very
close!), set
your polygonal lasso
to 1 pixel, and then very precisely click around the area you want
to have in color. I'm doing only the blues, because whites can tend to show
up a little strange
when doing photo tinting like this (shades of pink and blue in the whites
look weird).

To select both eyes at the same time, move to the other eye and start your
new lasso
by hitting shift at the same time you click. This will select this area in
addition to the other.
Conversely, if you'd like to deselect an area within a lassoed area, hit alt
before starting
to click and it will not affect that area.

(kinda creepy, isn't it?)
Now control+C to copy the eyes, and control+P to paste them right back in...
this should paste them directly over where they are already. They are now
in
their own layer:

If you click on the eye next to Layer 1 (or 0 if you're working that way),
it will make
that layer invisible, and you can see exactly where the eyes have been placed:

(now that's REALLY creepy!)
Click on layer 1, then to go Image > Adjustments > Desaturate

This will keep the 2nd layer, which is the eyes only, colored, and
will desaturate the selected layer (layer 1 or 0).
